Basil Chicken/Kaprao Gai กระเพาไก่

Fried chicken with basil leaves.

Ingredients
    Healthy Boy Thai Dark Thick Soy Sauce - 23.5 oz bottle x 2Thai Hot Pepper - 50 Seeds - GARDEN FRESH PACK!LouAna vegetable oil (Pack of 3)
  • 450 grams chicken thighs, cut into bite-size pieces
  • 5 cloves garlic, finely chopped
  • 1/2 cup onion, sliced
  • 2 tablespoons vegetable oil
  • 2 teaspoons black soy sauce
  • 2 tablespoons fish sauce
  • 1 cup fresh holy basil
  • 7 chili , chopped and pounded coarsely
  • Generous Dash of ground white pepper

Prepare each ingredient and set aside to allow quick stir fry technique.

Leave the fresh basil leaves whole.

Heat a wok until the surface is hot. Add oil to one side and swirl to coat the wok surface.
Add the chicken pieces over the surface of the wok. Sprinkle generously with the white pepper. Do not stir, allow them to brown and begin to turn colour. Then add garlic  stir fry until the chicken is no longer pink. Add chilies ,onion,black soy sauce and fish sauce continue stir frying.

Then add fresh basil leaves. Stir and mix
well. Stir-fry another half a minute, or until the basil is wilted
and the chicken is cooked through.

Stir and transfer to a serving dish, or spoon directly over individual
plates of plain steamed Brown Jasmine rice.
